HOW WE CRAFT OUR

From 50-year-old Shiraz vines and carefully tended blocks, we harvest small parcels of fruit — chosen for balance, flavour, and character.
Craft.
Each batch is hand-plunged, basket-pressed, and matured in quality oak. Traditional methods that demand patience, but reward with depth and structure.
Release.
Our wines are crafted in small quantities, with 50-year-old Shiraz vines forming the foundation for our blends and Sparkling Shiraz. Each release is typically held back for two years of bottle age, ensuring the wines are ready to enjoy upon release, yet with the structure to reward further cellaring.

Cellaring
Most of our wines will develop beautifully over 3–7 years. Reserve releases reward longer cellaring.
Storage
Keep bottles in a cool, dark place, ideally on their side to maintain cork moisture on our Sparkling Red.
Serving Temperature
Enjoy reds at 16–18°C for balance and depth.
Decanting
Younger wines benefit from decanting to enhance aromas and soften tannins.
